Chicken Shwarma

If you’ve never tried Chicken Shwarma, the warning is it’s extremely addictive! We’re all used to the meat and chicken kebabs that you get from chip shops and the feeling of guilt that comes with buying one on the way home from the pub – well this recipe gets rid of the guilt but gives you all of the fantastic taste. What’s not to like?!

It’s a Turkish recipe and the crispy, spicy chicken usually comes parcelled up in a soft flatbread with salad and hot sauce. You can adjust the heat to suit and serve it with whatever you fancy. It’s dirty food turned good…

You could make double this amount and leave half of it uncooked, in its ziplock bag in the freezer.

Chicken Shwarma – serves 2-3

500g chicken (a mixture of breast and thigh is best) cut into thin pieces

2 cloves garlic grated/finely chopped/crushed

Small thumb of ginger grated/finely chopped

1tsp salt (to taste)

1tsp sugar (optional)

Black pepper to taste

2tblsp oil

Salad to go in the flatbread – shredded cabbage/iceberg lettuce, shredded carrot, cucumber slices, tomatoes

Flatbread such as chapatti, naan, Turkish flatbread, pitta etc.

Spice Mix: (you can buy these spices here at Sally & Stef Spices)

2tsp Shwarma spices

1tsp ras el hanout

1-2 tsp pul biber

Cut the chicken in.

Cut the chicken into thin strips.

Mix the spices with the oil to form a paste.

Put all of the ingredients into a zip lock bag and seal. Squash and squeeze until all of the chicken is coated in the spices and there are no pockets of the spice mix visible. Leave to marinate from 10 minutes to overnight (the longer you leave it, the better the taste). Let the chicken come to room temperature if you’ve left it in the fridge.

Prepare the salad.

Heat the oven to 240C Gas 9 and put a baking tray in the oven to get hot.

Put the chicken and any marinade onto the hot baking tray and cook for 10 minutes and then stir it around on the tray. Return to the oven and carry on cooking until it starts to get crispy and charred in places – another 10 minutes.

Serve with flatbread, salad, a squeeze of lemon, hot sauce, mayo, tahini and whatever else you fancy!
